Apple Banana Fairy Cup Cakes



A ripe raw apple is one of the easiest ways to combat melancholy.  Try it!

Apple Banana Fairy Cup Cakes

Ingredients

Makes a dozen
  • 2 1/2 cups plain flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 stick butter, softened
  •  1 teaspoon Maple Syrup, Brown Sugar
  • 2 teaspoon honey, raw sugar/sugar substitute.
  • 2 eggs
  • 1 teaspoon vanilla powder
  • 4 tablespoons milk
  • 2 ripe bananas, mashed
  • 2 apples - cored and grated

Preparation method

Prep: 20 mins | Cook: 25 mins

Preheat oven to 350 degrees. Grease and flour 12 muffin cups, or use paper fillers . Sift together the flour, baking soda, salt, cinnamon and nutmeg. Set aside.

In a large bowl, cream together the butter and sugar/maple syrup/honey until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla and milk. Beat in the flour mixture, mixing just until incorporated. Fold in the mashed bananas and grated apples. Fill each muffin cup half full.

Bake in the preheated oven for 20 to 25 minutes, or until you insert a toothpick into the center and it comes out clean. Allow to cool.  Here comes the fairy part.   Cut top of cupcake off at the muffin line.  Allow to cool.   Ice with your favorite frosting.   Cup tops in half, frost or leave plain and replace on top of cupcake as wings.  Fairy Cakes!
